Mom, Recipe, Tomato soup cake

One blogger I follow likes to use the phrase ”I lead a dull life” Well here on McLeod Street we don’t, despite the fact that most of the inmates of our building are over 50.

We had 2 false Fire Alarm in the last 3 days. The problem is due to a malfunction of the sprinkler system in the garage. The computer likes to trigger Fire alarms at 11:35pm or at 06:30am. Our Dachshunds are not amused at all, this morning Nicolas refused to eat his breakfast he was spooked by the noise of the alarm which is a buzz sound. Fire dept arrives within 3 minutes they are just a couple of blocks over and we have all these friendly firemen walking around. They come in inspect and then shut off the alarm. They even escort people back to their apartments, this is a 12 storey building. So I decided to bake a cake for them because they are just too darn cute.

Here is my Mom’s Tomato Soup Cake recipe.

Ingredients

3/4 cup shortening

1 cup sugar

2 eggs

1 ten once can of Campbell’s Tomato soup ( please use Campbell’s for best results)

3/4 cup water

1 teaspoon Baking Soda

3 cups all purpose flour

1 tablespoon baking powder

1 teaspoon Cinnamon

1 teaspoon nutmeg

1 teaspoon cloves

Putting it all together

Cream shortening and sugar thoroughly, add eggs + beat well then combine soup, water and baking soda.

Sift together flour, baking powder and spices.

Add soup mixture and sifted dry ingredients alternately, stirring after each addition.

Pour into a square greased (or non stick) pan 9 x 9 x 2 in.

Bake at 350 F. for 50 minutes. Once cooked let it cool before putting on the icing.

Icing ingredients

4 Oz Cream Cheese, 1 1/2 cup icing sugar, half tablespoon butter, half teaspoon Vanilla.

Beat cream cheese to smooth and then combine all the other ingredients until smooth.

Here is a photo of cake.

garden, Mom, Tomato soup cake

Today Sunday 28 June the weather in Ottawa was cold 15 C windy and rainy, extremely unusual for this time of the year. In fact we have only had dinner on our terrace a few times this year because of the cold weather, when usually in late Spring and Summer we have dinner every night outdoors.

Here are some shots I took today of the garden outside our building, very green with the wet and cool weather the plants are doing well.

Also today I wanted to try out a cake recipe my mother left me. This simple recipe was a favorite of us kids at home so many years ago. The Tomato Soup Cake with a Cream Cheese icing. It turned out well and I am quite happy about it. I cannot remember when I last baked a cake, this is something I do not do.

The texture is somewhat like a Spice Cake, it does have Cloves, Nutmeg and Cinnamon as spices. It also has to be Campbell’s Tomate Soup for the mix.
